Tipo de uva: 100% Tempranillo procedente de cepas viejas de 50 años.
Vinification: Fermentations take place in stainless steel tanks, at a controlled temperature of 27 °C. Alcoholic fermentation lasts approx. 15 days, plus 20 days maceration. Malolactic fermentation lasts around 30 days.
Ageing: High oaked wine. 18 months in French oak casks and 24 months in bottle.

TASTING NOTES
Colour: Intense garnet red; concentrated and solid. Clear and glossy.
Bouquet: Deep and elegant to the nose, with hints of fruit. Very fine aromas due to its ageing in high quality Allier oak.
Palate: Good body and lively tannins, in perfect harmony. Very expressive on palate with significant ageing potential. Long finish.
FOOD PAIRING
It demands more elaborated meals, and stronger meats. It pairs with anything that has dried fruits, spices like vanilla, cinnamon, cloves or nutmeg. We are talking about more elaborated and complex meals. Anyway, it is perfect with any cheese or salmon.
