VINIFICATION AREA
32 stainless steel tanks of 35,000kg of capacity each one make the vinification area up. Besides each tank counts with a cooling system that help us control the temperature at which alcoholic fermentation takes place by having a look at the temperature chart located at the end of the area, close to the lab.
In the same way, it has an automatic pumping over system. One or twice per/day to take out the head (sombrero) solid mass made up mainly of the skins which floats on the surface of the must/wine during fermentation.
In this same area we can find the lab and a room for wine tastings.
THE LATEST ENLARGEMENT OF THE WINERY
In 2008 a new vinification area was built equipped with 40 stainless steel tanks: 35 with 25,000 litres of capacity plus 5 with 50,000 litres.
The objective of the new built is to keep the right tracealibity avoiding that the wine remains too long in the bottle, obtaining the best quality.
THE BARREL ROOM
Bodegas Altanza has a room that keeps 8.500 barrels of 225 liters each one. A 90% of our barrels is french oak and the 10% left is american oak.
In the last years we have decided to use exclusively french oak as we consider it is more elegant an oak that transfers smooth aromas to the wine without covering all the fruity aromas of Tempranillo.
Each six months we make the racking process in order to eliminate the lees and clean the barrel. Besides once a barrel has been used for 4-5 years, we change it for a new one.
OUR WOODEN VATS
Close to the cask room, the vat room represents the evident effort of the Altanza makers to offer an elegant, quality wine regularly, vintage after vintage.
